My 9 month old Nephew!

Pop's took some 9 month photos of Campbell this past weekend and this was my favorite one. We are still babysitting Campbell on Monday evenings so my sister and brother in-law can go to Bible study. We love hanging out with Campbell and watching him grow up. He is starting to let us rock him to sleep. What a big boy!

Dirt Dessert

This is seriously one of my new favorite desserts! If you need a new recipe to try this is it.
Dirt Dessert

Ingredients:
1 package (8 ounces) fat-free cream cheese
1 package (3 ounces) cream cheese, softened
3/4 cup Domino® or C&H® Pure Cane Powdered Sugar
3-1/2 cups cold fat-free milk
2 packages (1 ounce each) sugar-free instant vanilla pudding mix
1 carton (12 ounces) frozen reduced-fat whipped topping, thawed
1 package (18 ounces) reduced-fat cream-filled chocolate sandwich cookies, crushed

Directions: In a large bowl, beat cream cheeses and confectioners' sugar until smooth. In a large bowl, whisk milk and pudding mixes for 2 minutes; let stand for 2 minutes or until soft-set. Gradually stir into cream cheese mixture. Fold in whipped topping. Spread 1-1/3 cups of crushed cookies into an ungreased 13-in. x 9-in. dish. Layer with half of the pudding mixture and half of the remaining cookies. Repeat layers. Refrigerate for at least 1 hour before serving. Yield: 20 servings.

My side notes on the recipe: I used 1/3 fat cream cheese for all 11 ounces needed. I didn't use reduced fat oreos but instead used regular oreos and took the cream out of 1/3 of the cookies before I crushed them. I also add strawberry slices when served. Yum!

High Desert Museum

A couple weekends ago we went to Madras to visit Trav's parents. On Saturday we went to the High Desert Museum in Bend, OR. I had a lot of fun exploring. Here are a few of the pictures I took while we were there.

My dad loves goats so I was trying to document the goats for him. However, the darker brown goat was itching his ear in every picture I took. Crazy goat!

I told Travis he should take a picture of me at the High Desert Museum and this is the scenery he picked for me. At least I like yellow!
