Weekend with Lance, Jolene, Lydia, and Thiago

I took one of my personal days last Friday so I could spend a few extra hours with everyone.  We had hoped to go to the zoo, but the weather didn't cooperate because it was cold and rainy!  Instead we enjoyed a lazy morning around the house, Kayla, Josh, and Kiara coming over to visit too (this was Lance, Jolene, Lydia, and Thiago's first time meeting Kiara), lunch at Wendy's, and baking olive oil bread sticks to go with our yummy chicken parmesan dinner we made at home.  


Olive Oil Bread Sticks (recipe included especially for Jolene)

1 C and 2 T water (warm 80 to 90 degrees)
1/3 C olive oil, plus 3 T 1T per cookie sheet
1 t salt, plus 1 t coarse sea salt
3 1/2 C flour
2 1/2 t yeast
1 t Italian seasonings (optional)

Put the above ingredients into the kitchen aid mixer.  Mix, a ball of dough will form and slap around the bowl.  Let the dough spin around 10 times to knead it before stopping the mixer.  The dough will feel warm, soft and tacky.  Collect any bits of dough from around the bowl and attach them to the ball.  Cover, set on heating pad (medium heat), and let rise 45 minutes to 1 hour.  Lightly flour counter top.  Scrape the dough from the bowl onto the flour.  Using your hands to press it into a rectangle, 12/18 inches by 6/9 inches with a long side facing you.  Preheat oven to 425 degrees.  Pour the remaining olive oil onto 2/3 baking sheets.  Use your hands to spread it around.  Spread the oil left on your hands all over the top of the rectangle of dough.  Sprinkle coarse sea salt onto the dough.  Use a pizza cutter of chef's knife to slice the dough into 1/2 inch strips.  Twist.  Let them rise uncovered for 10 minutes.  Bake one cookies sheet at a time for 13 to 17 minutes, until pale golden brown and fire to touch.

On Saturday the boys went to the zoo.  Travis told me that Lance took lots of pictures (but we didn't get the copies of the pictures before they left-good thing we are visiting them next week).  I guess it was a day for "riding"...Daddy's TWO pictures show riding a horse and riding an elephant. I also know that they got to ride the zoo train!



 


The girls including cousins, Lauren and McCall, went shopping at the Woodburn Outlet Mall.  I found a pair of jeans for me, a sweatshirt for me, and a coat for Isaiah.  Isaiah happily modeled his new coat for me before bed that evening.    




We had a great visit with our family and we are looking forward to a more extended visit soon!
