We needed to eat a quick dinner on Monday because Travis had to take Sophie to her vet appointment by 7pm. For dinner on Monday evening I decided to make an egg scramble, but I also tried a new recipe for chocolate chip muffin, which we really enjoy.
Low Carb Chocolate Chip Muffin
What you will need:
- 2 1/3 cups of almond
meal
- 2 tsp of baking powder
- 1/4 tsp of salt
- 4 eggs
- 1/2 cup of water (I left this out)
- 1/2 tsp of liquid stevia
(I didn't have this sugar substitute so I just used 1/2 cup of sugar)
- 1/2 cup of free
chocolate chips
Directions:
- Preheat oven to 350
degrees.
- Mix together the dry
ingredients first. Add wet ingredients and mix until they are all blended
together.
- Place baking cups into
muffin tray. Scoop enough muffin batter to fill each muffin tin about 2/3
of the way full.
- Bake for 15 minutes.
By the time dinner was over...Isaiah had tried a muffin (but wasn't a huge fan however he isn't a huge fan of most foods), and Travis and I both had three muffins each-they were so delicious! We will be making these again.
Isaiah was a happy boy at dinner, but instead of the eating the new muffin he preferred toast.
After dinner Travis took Sophie to the vet and Isaiah and I went to Fred Meyer to get milk and a few other groceries. While at the store ... and like normal we had to say "hello" to the radishes. And today he wanted to "hold them" which ended up meaning have them sit by him in the cart. So all while we did our shopping I carted this lovely bunch of radishes around, but since our family doesn't like radishes Isaiah willingly put them back before we checked out.
When we got home...both before 7:30pm and it wasn't raining I suggest a short evening walk. We got ready and headed out the door to find a lite sprinkle now occurring, but we decided to go ahead. Well lets just say that not too far into our walk it started raining CATS and DOGS! It was POURING the rest of our walk! We quickly were completely SOAKING WET, but continued along the path having many good laughs on this walk. Isaiah was in great spirits too...he even wanted to stop by the park and go on the twisty slide, but we didn't go for that option.
Travis was trying to capture the large puddle of water in the foot base of the stroller, but it is hard to see the quantity of water in the picture. And even though Isaiah was soaking wet he still wanted to buckle the straps on the stroller before he went inside to take a warm shower.
Our shoes were still drenched in the morning and decently wet in the afternoon so I put them in our backyard in the small pockets of sun in hopes for them to dry faster.
Ah family adventures...so fun!
